The vacated Einstein Bagel store at 80 Nassau St. will soon have a new tenant, an Ebenezer’s Coffee franchise owned by Kang and Cecillia Sun of Basking Ridge.
According to Ms. Sun, the grand opening for the new store will be "Sept. 1 or sooner." Einstein Bagel closed abruptly on April 27.
Mr. and Ms. Sun moved to the Princeton area about two years ago, Ms. Sun said. Ms. Sun – who has a master’s degree in nutrition and food service management and more than 15 years of experience as a dietitian at the Robert Wood Johnson University Hospital – will manage the day-to-day activities at the store. Her husband is the vice president of technologies at Honeywell Inc. in Morristown.
"We have family members who attended Princeton University and we fell in love with the Princeton area," Ms. Sun said. "Our goal is to establish a coffeehouse that is a meeting place for the Princeton community to relax and exchange ideas."
Ebenezer’s will offer 21 varieties of specialty coffee and espresso as well as 10 varieties of the chain’s trademark "Ebanini," a grilled panini-style sandwich served on baguette bread. The store also will offer salads, desserts, baked-on-the-premises muffins and homemade soups. Prices for most of the sandwiches and salads will be in the $4.95-to-$7.95 range. The store also will offer a rotating menu of daily specials.
The store will be open from 6:30 a.m. to 10:30 p.m. Mondays through Thursdays; 6:30 a.m. to midnight Fridays and Saturdays; and 8 a.m. to 10:30 p.m. Sundays. As an added attraction, the store will feature live musical entertainment on weeknights.
"We want Ebenezer’s Coffee to be the meeting place for Princeton people who are seeking intellectual stimulus and thirst quenchers," Ms. Sun said.
Ebenezer’s Old World Coffee is a regional food and beverage chain that has five locations in Pennsylvania and New Jersey.

H. Gross and Co. Outfitters is moving from its 51 Hulfish St. location. According to owner Henry Gross, he would like to move to Nassau Street. The store, which recently filed for bankruptcy, will continue to sell its sporting goods and Princeton University memorabilia at www.hgross.com or via e-mail at info@hgross.com.
Forest Jewelers, at 104 Nassau St., was closed for just one day Thursday, Aug. 3, for the installation of new carpeting. According to a store spokeswoman, the new wall-to-wall carpeting is the first phase in the store’s renovation project.
